I like Nate Burleson, but the rest of the receivers are risky to play for this week. Bess is not going to get anything going with a third string QB at the helm. Brandon Gibson (like you said) is the second option and will not get as many looks. Seyi Ajirotutu only had that one good week, and Floyd is coming back from his hamstring injury.
